Good day all.
A couple days ago my Polo's engine suddenly started to splatter and then cut out totally and didn't want to start again. I got it to start again by manually choking it with my hand on the throttlebody's intake. It idles fine and revs fine if I open the throttle gently, but as soon as I open the throttle quickly it splatters and cuts out and doesn't start again unless I choke it manually. I have replaced the fuelpump and filter but the problem persits. Any advice on what the cause might be?

Check fuel pressure at the rail, measure the resistance of the temp sensor and clamp the return line and report your findings. Check all the pipes attached to the manifold for air leaks.
It runs when you choke the motor because you are artificially reducing air intake. So it's either air leaks or low fuel pressure.
