Hi there

My car radiator fan turns off when switch off my engine after I’ve been driving it for a long time isn’t it supposed to stay on longer until the car cools down

It depends on the ambient temperature.
If it is very hot, the fan will run for a while after the ignition is turned off. If it is cooler, it stops when the ignition is turned off.
